Curitiba – Thanks to the Veneto Agriculture Institute, the Brazilian state of Paraná can now produce a new “typical” cheese under a local brand. The area is characterized by a high production of milk, but hard cheese production and consumption are still non-existent. The result stems from a collaboration within the “Rete” project, supported by the Veneto Region and coordinated by the Belluno in the World Association, with the participation of Veneto Agriculture, the Institute of Thiene (Vi) and Bioagro Ltd. The University of Pato Branco, Veneto Agriculture and Bioagro developed together two types of starter cultures selected from raw milk collected in Parana. Their objective is to develop an autonomous production that can bring together several municipalities in the State of Parana. (9Colonne)
