Tokyo – A guide to Italian PDO restaurants in Japan, South Korea and China is now available in local languages and English, as a useful tool for those involved or interested in various capacities in the business and consumers (local, foreign tourists and Italian residents or visitors). “Certified Italian Restaurants in China, Japan to Korea” was published for the first time at the initiative of the Italian Chamber of Commerce in Japan, the Italian Chamber of Commerce in China and the Italian Chamber of Commerce in Korea. In Japan, it is estimated that there are at least 16.000 Italian restaurants (while there are 3.000 in Korea). But only 57 are certified (in recent years, the certificate was granted to 73 establishments, but some closed and others lost it). There are ten criteria that an restaurant must follow in order to be granted and maintain the certification. (9Colonne)
