July 28 – Italy’s culinary excellence crosses national borders once again, and this time reaches Brazil. The culinary path is innovative and original thanks to chef Raffaele Mancini, who reinterpreted vegetarian, vegan and light cuisine. He indeed hold a course – scheduled for August 25-29 – at the Sao Paulo Italian Culinary Institute for Foreigners. ICIF is a Professional School of Italian Cuisine for Foreigners, that, for over twenty years, has been a valuable point of reference to train professional chefs from different countries. Mancini is a chef looking for the perfect balance between a healthy body, a balanced mind and a refined sense of taste. He is a specialist in vegetarian, vegan and light cuisine but has also been studying menus for celiacs and those who suffer from food allergies. The course, dedicated to Nutrition, will be held at the Centro Paula Souza.
