Düsseldorf – A Tuscan who lives in Dusseldorf exists. His name is Gianluca Casini, who for the past 13 years has been raising his daughters Lara and Alice in the German city. In Düsseldorf, Casini opened a restaurant “L’arte in cucina” and has become one of the many emigrants considered by the Academia Barilla an ambassador of Italian cuisine abroad. “I modernize the the ancient recipes – he explains – of the Tuscan tradition, giving them a modern twist.” Casini took part in the international vegetarian cuisine competition at the restaurant “Joia” in Milan, where he presented tomato soup with taro, a typical recipe revisited in a biodynamic form. The competition, promoted by Swiss chef and nutritionist Pietro Leemann, awarded a Swedish chef, but Italy was well represented thanks to Casini. (9colonne)
