Montreal. An ‘adult’ Parmigiano Reggiano is the cheese that allowed Canadian consumers to start the year in a special way by tasting and buying an 18-year aged Parmesan from the Azienda Agricola Bonat of Basilicanova (Parma). The cheese, produced in July of 1998, was sold at a price that makes it one of the most expensive in the world: €10,000 for a 33kg wheel. The purchaser, Valoroso Food, is a renowned food importer based in Canada that devoted a special presentation for the 33kg wheel underlining how it presented the perfect characteristics from structure to the wide scope of aromas due to its long aging process; all thanks to choices of quality based on the production of Parmigiano Reggiano.
