Aug. 27 – Jamie Oliver has chosen Pedon; and if he says so, you have to believe him. The internationally renowned British chef, television presenter and author of many cookbooks, chose the Molvena (Vi) company for its bulgur, which will be served in Oliver’s restaurants in Moscow and Hong Kong. Bulgur, similar to couscous but with larger grains, is a food made from durum-sprouted wheat, which is then treated in a special process: the grains are steamed and dried, then ground into small pieces. Widespread in the Middle East, this ancient food is a good source for fiber, vitamin B, phosphorus and potassium. It’s mainly used as a substitute for pasta or rice, and it can be served warm as pilaf or soup, or cold as tabbouleh or in salads.
